For durability and corrosion resistance, the Vulcan LG400-1 gas fryer is constructed of stainless steel, while its fry tank measures 14 inches long by 14 inches wide and has an oil capacity of 40 to 50 pounds.

The basket hanger, which holds the twin baskets when they are not in use, is removable for cleaning, and both baskets have plastic handles to minimize injury while frying foods. A large cold zone in the shape of a V enables sediment to fall beneath the burners, preventing it from burning and ruining the flavor of the oil.

Cleaning out the fry tank is straightforward with the 1¹⁄₄-inch full port ball-type drain valve, and there is a snap-action thermostat that monitors the temperature of the oil so it can alert the fryer to increase temperatures when more product has been added. Heated with LP gas, this Vulcan LG400 gas fryer has a temperature range of 200 to 400 degrees Fahrenheit, and a high-limit shut-off switch turns the flow of gas off if the standing pilot goes out.
